Ingredients:
8 ounces of cod fillets
1 tablespoon butter
1/2 tablespoon lemon juice
1 clove garlic, finely chopped
1 tablespoon fresh Freeman Herbs Organic Italian parsley, finely chopped
1/4 teaspoon fine sea salt
1/4 teaspoon pepper
1 cup cherry tomatoes
(optional) 3-6 lemon slices
Directions:
Preheat your oven to 400 °F.
Melt the butter in a microwave-safe bowl. Add the lemon juice, herbs, salt, and pepper.
Place the cod in a baking dish and spread the tomatoes around the dish. Using a spoon, spread the butter mixture over the cod and place lemon slices on top of it.
Bake for 14-20 minutes or until cooked through and flaky.
