Ingredients
1/2 cup grated Parmesan
1/2 cup fresh Freeman Herbs Organic cilantro leaves
1/2 cup fresh Freeman Herbs Organic parsley leaves
1/4 cup fresh Freeman Herbs Organic basil leaves
1/8 cup fresh Freeman Herbs Organic mint leaves
2 tablespoons chopped fresh Freeman Herbs Organic chives
Zest and juice of 1 lemon
3/4 cup canola oil
1/4 cup extra-virgin olive oil
Salt and pepper
Chopped tomatoes for garnish (optional)
Directions
In a food processor, blend the toasted almonds and garlic until they become fine.
Add the spinach, grated cheese, herbs, lemon zest, and lemon juice to the food processor.
Pulse the herbs briefly, about 3 seconds, until they are mixed.
While the food processor is running on a low setting, slowly pour in the canola oil and olive oil.
Season the mixture with salt and pepper according to your taste.
Blend the ingredients to achieve your desired consistency for the pesto. Transfer the prepared pesto to a serving bowl.
Optionally, garnish the pesto with chopped tomatoes on top.
Store any leftover pesto by placing it in a bowl, covering it with plastic wrap, and refrigerating it.
