Butternut Squash Soup


Ingredients


  • 1 tablespoon olive oil

  • 1 small diced onion

  • 1 tablespoon fresh Freeman Herbs Organic thyme leaves

  • 1 butternut squash, peeled, seeded, and cubed

  • 1 cup chicken or vegetable broth

  • Salt and pepper to taste

  • Optional: Greek yogurt, sour cream, or cashew cream for serving


Directions


In a large pot, cook the onion and thyme in olive oil until softened.


Add the squash, broth, salt, and pepper. Bring to a boil, then simmer for 20-30

minutes until the squash is tender.


Mash the soup to your preferred consistency.


Serve with extra thyme and a dollop of Greek yogurt, sour cream, or cashew cream if desired.
